Burdock is a sturdy plant in the thistle family known for its long taproot, which can reach several feet into the soil. The dried root goes by a few names: Arctium lappa in botany books, and gobo in Japan, where the fresh root is a common cooking vegetable. Ours comes cut and sifted, ready to brew.

The taste is earthy and mildly sweet, closer to a root vegetable broth than a floral tea. Burdock root tea is usually simmered rather than steeped, since roots give up their flavor more slowly than leaves and flowers do.

HOW TO MAKE BURDOCK ROOT TEA:

Add 1 to 2 teaspoons of cut burdock root to 8 to 12 fl oz of water. Bring to a boil, then simmer gently for 10 to 20 minutes. Strain and drink it hot, or chill it for iced burdock tea. You can simmer the same root a second time.
