How to make yerba mate tea
Add 1 to 2 teaspoons to 8 fl oz of hot, not boiling, water. Cover and steep for 3 to 5 minutes, then strain. The temperature is the part people get wrong. Boiling water scorches the leaf and turns the cup harsh and bitter, so take the kettle off before it boils, or let it stand a minute first.

A holly, Ilex paraguariensis, native to the subtropical forest of South America.
