What a bitter actually is

Bitters are the oldest category in Western herbalism and they work through taste. The bitter compounds in dandelion root, mostly sesquiterpene lactones, are what give the cup its edge, and tasting them is the point rather than a side effect. That is why a bitter is traditionally taken as a drink.
