Yellow dock root, cut and sifted, 4 oz. Rumex crispus, a hardy wild plant in the buckwheat family, also known as curly dock, or lengua de vaca in Spanish. Grown and harvested in Albania, with the strong, earthy, bitter flavour yellow dock is known for. One ingredient, nothing added.

Yellow dock has a long place in traditional herbal kitchens, usually taken as a simple bitter tea or a tincture. Because ours is already cut and sifted, it drops straight into a teapot or an infuser. Its bold bitterness pairs well with sweeter roots, so many people blend it with dandelion or burdock.

How to make yellow dock tea

Add 1 teaspoon to 8 fl oz of boiling water. Cover and steep for about 10 minutes, then strain. It is boldly bitter on its own. If that is too much, use half a teaspoon, or brew it alongside a sweeter root such as burdock, which is the traditional way it is drunk.

What it tastes like

Strong, earthy and properly bitter, closer to dandelion root than to anything floral. This is not a gentle tea and it is not pretending to be. People who like bitters take to it; people who want something soft usually blend it.

What yellow dock is

A tall wild plant with long wavy edged leaves, which is where the name curly dock comes from, and rusty brown seed heads that stand through winter. It grows on waste ground, verges and field edges across Europe and North America. It is in the buckwheat family, alongside rhubarb and sorrel, not the daisy family.

How to store it

Tightly closed in a dry place at room temperature, 59 to 86°F (15 to 30°C), as printed on the bag. Keep it away from heat and light to hold the flavour.
