How to make white hawthorn tea, and why it is a long steep

Add 1 to 2 teaspoons to 8 fl oz of boiling water and steep for 10 to 15 minutes, then strain. That is a long steep by the standards of this range and it is deliberate. Hawthorn is woody and it does not give much up in five minutes. Because it is cut and sifted the pieces are small, so a fine mesh strainer or a tea ball holds them better than a wide colander.
