How to make red clover tea

Add 1 to 3 teaspoons to 8 fl oz of boiling water. Cover and steep for 10 minutes, then strain. Start at 1 teaspoon and work up, since the strength is yours to set with a loose herb. Because it is cut and sifted the pieces are small, so a fine mesh strainer or a tea ball holds them better than a wide colander.

What it tastes like

Floral and mild, with a touch of vanilla on the finish. It is one of the gentler herbal teas, closer to chamomile than to a bitter root, and it takes lemon or a spoon of coconut sugar well. It is naturally caffeine free.
