INGREDIENTS:
Dressing:
¼ cup key lime juice
¼ cup olive oil
1 tsp maple syrup
1 tsp sea salt
1 tsp onion powder
½ tsp papaya seed pepper
Salad:
1 cup red bell pepper | chopped
1 cup yellow bell pepper | chopped
1 cup green bell pepper | chopped
¼ cup red bell pepper | chopped
1 cup chickpea pasta | elbow or similar
1 cup black chickpeas | cooked
1 cup cilantro | chopped
¼ cup dressing
INSTRUCTIONS:
In an airtight jar, add all of the ingredients for the dressing. Shake well, then set aside.
In another bowl, add the ingredients for the pasta and ¼ cup of the dressing.
Toss well, then enjoy!
