INGREDIENTS:
Pesto
2 cups arugula
½ avocado | chopped
2 tbsp walnuts | ground
1 tsp onion powder
½ tsp sea salt
1 tbsp olive oil
1 tbsp key lime juice
¼ cup spring water
Salad
1 cup cucumbers | chopped
½ cup tomatoes | chopped
¼ cup red onion | sliced
1 cup avocado | chopped
¼ cup chickpeas | cooked
2 tbsp arugula pesto
INSTRUCTIONS:
Add all ingredients for the pesto to a blender, blend, then set aside.
In a bowl, assemble all ingredients for the salad. Add the arugula pesto, mix well and enjoy!
