Vegan Breakfast Muffins


3 spelt tortillas | cut
¼ cup chickpea flour | dissolved in ½ cup vegetable stock
1 tsp onion powder
½ tsp sea salt
1 tsp dried basil
1 cup red and green bell peppers | chopped
½ cup onions | chopped
¼ cup fresh cilantro


Add pieces of spelt tortilla to a muffin pan and set aside.

In a bowl, add all of the remaining ingredients and mix well. Add mixture to pan then bake in a preheated oven at 350 F for 10 minutes or until set. Serve and enjoy!
