INGREDIENTS:
1 cup chickpea flour
1 cup approved milk
½ cup sparkling spring water
½ cup date sugar
1 tsp vanilla
¼ cup aquafaba
⅛ cup avocado oil
INSTRUCTIONS:
Add all of the ingredients to a bowl except the aquafaba and avocado oil. Mix well then set aside. In another bowl, whisk the aquafaba until a soft peak consistency is reached then slowly add the mixture and the avocado oil.
In a pan brushed with avocado oil, add ¼ cup of the pancake mix. Cook until the edges look dry and firm, then flip to cook the other side. Serve with whipped cream and top with your favorite fruits.
