Birria Sauce

INGREDIENTS:

1 large onion | roasted
1 red bell pepper | roasted
¼ cup avocado oil
2 cups vegetable stock
1 tsp oregano
½ tsp cloves
1 tsp cayenne
1 tsp onion powder
1 tsp sea salt
1 tsp achiote powder
3 bay leaves

INSTRUCTIONS:

In a pot add all of the ingredients, turn heat to medium and simmer for 5 minutes. Transfer to a blender and blend until smooth. Use as dipping sauce or pair it with birria tacos.

Optional: blend in 1/2 teaspoon of sea moss gel, made from raw sea moss, to thicken the sauce, or add a small pinch of sea moss powder.
