INGREDIENTS:
Birria Meat:
3 cups oyster mushrooms | shredded
¼ cup key lime juice
¼ cup avocado oil
½ cup onions | minced
¼ cup vegetable stock
1 tbsp onion powder
1 tsp sea salt
1 cup cilantro
1 tsp cayenne
Tacos:
5 spelt tortillas
1 cup birria sauce
INSTRUCTIONS:
Birria Meat:
In a pot, add the oil and the rest of the ingredients starting with the onions. Saute on medium heat for 5 minutes and set aside.
Tacos:
Add oil to a pan and turn the heat to medium. Dip the tortilla in the birria sauce and place on the pan. Add a spoonful of the mushroom meat to one side of the tortilla. Fold the tortilla and cook for 1 to 2 minutes. Serve hot with the birria sauce on the side.
