Mushroom Soup with Papaya Pepper Seeds


¼ cup avocado oil
2 cup button mushrooms | peeled and chopped
½ cup onions | sliced
1 tsp thyme
1 tsp sea salt
1 tsp onion powder
3 cups vegetable stock
1 tsp dried papaya seeds


In a pot, add oil and saute the mushrooms, onions and spices. Cook on low heat for 5 minutes. Add the vegetable stock and simmer on low heat for 20 minutes.

In a blender, add half of the mushroom mixture and blend until smooth. Add blended mixture back to the pot with the remaining mixture and simmer for 5 minutes on low heat. Top with crushed papaya seeds and serve. Enjoy!
