INGREDIENTS:
Salad:
1 cup cooked quinoa
1 firm avocado | sliced or diced
1 cup fresh blueberries
1 fuji apple | diced
½ cup red onions | finely diced
1 small shallot | finely diced
½ cup fresh cilantro
¼ cup dried cherries
1 tbsp hemp seeds
Cilantro Lime Dressing:
⅓ cup packed cilantro leaves
¼ cup olive oil
2 tbsp key lime juice
1 tsp sea salt
1 tsp onion powder
1 tsp ginger powder
INSTRUCTIONS:
Add all dressing ingredients to a high-speed blender and blend until smooth. Set aside.
Add cooked quinoa to a large bowl. Then add avocado, blueberries, apples, onions, shallot, cilantro, dried cherries and hemp seeds.
Pour dressing over quinoa salad and toss to combine. Garnish with extra cilantro and avocado slices. Serve at room temp or cold.
