INGREDIENTS:
2 cups cherry tomatoes
1 onion
1 red bell pepper
1 zucchini
1 tsp salt
1 tsp basil
¼ cup avocado oil
2 cups spelt pasta | cooked
INSTRUCTIONS:
In a baking dish, add all of the ingredients for the sauce. Bake in the pre-heated oven at 400 F for 20 minutes. Transfer to a blender and blend until smooth. Add to the pasta and top with vegan parmesan cheese. Then enjoy!
