Spelt Tortilla
By Suhail Rivera, JD, founder of Alkaline Herb Shop
INGREDIENTS:
1 cup quinoa flour
1 cup spelt flour
1 tsp sea salt
⅓ cup avocado oil
¾ cup cold spring water
INSTRUCTIONS:
In a food processor, add the quinoa flour, spelt flour, salt and mix together. Add the avocado oil then slowly add the water. Mix and wait until the dough forms into a ball.
On a floured surface, knead the dough and cut the dough into equal sizes. Using a rolling pin, flatten the dough slices until a tortilla is formed. Cook in a cast iron skillet, then enjoy with veggie fajitas or use it to make burritos!
Optional: knead 1/2 teaspoon of sea moss gel, made from raw sea moss, into the dough, or add a small pinch of sea moss powder to the flour. Keep it to a pinch so the taste stays the same.
