INGREDIENTS:
2 cups zucchini | shredded
1 tsp sea salt
1 tsp onion powder
½ cup scallions | chopped
½ cup cilantro | chopped
½ cup spelt flour
½ cup avocado oil
INSTRUCTIONS:
Place the shredded zucchini in a bowl and sprinkle the zucchini lightly with salt. Allow the zucchini to rest for 10 minutes then squeeze out as much liquid from the zucchini as possible. Transfer the zucchini to a large bowl. Then add the remaining ingredients except the avocado oil. Mix and shape into patties.
In a pan brushed with avocado oil, cook the patties on medium heat for 2 minutes. Then serve with tzatziki and enjoy!
