INGREDIENTS:
1 cup goji berries
¼ cup dried cherries
1 medium shallot | chopped
¼ cup spring water
¼ cup apple juice
¼ cup orange juice
⅓ cup date sugar
2 tbsp date syrup
1 tsp ginger | fresh grated
pinch cayenne pepper (optional)
pinch allspice
1 tsp sea salt
zest of 1 orange
⅓ cup walnuts | chopped
DIRECTIONS:
Add goji berries, cherries and shallots to a saucepan.
Add juices and water, stir well to combine and cover.
Bring to a boil, then turn heat down to a simmer.
Cook for 15 minutes, or until the goji berries and cherries plump to double their size.
Stir in date sugar, date syrup, ginger, spices and salt. Cook 5 additional minutes.
Adjust seasoning if needed and remove from heat, stir in walnuts and orange zest.
Cool to room temperature. Sauce will thicken as it cools.
