INGREDIENTS:
1 cup quinoa | cooked
1 tbsp hummus | from Alkaline Herb Shop's FREE Cookbook
1 tbsp key lime juice
½ cup orange bell pepper | sliced
INSTRUCTIONS:
Slice a cucumber in half, remove the center then set the cucumber aside.
In a bowl, add the quinoa and hummus.
Mix well, then add the quinoa stuffing and the sliced orange bell peppers to the center of the cucumber.
Cut the stuffed cucumber into 1 inch slices and enjoy with avocado dressing!
