INGREDIENTS:
Roasted Zucchini:
2 zucchinis | cut into halves
¼ cup avocado oil
½ tsp sea salt
Salsa:
1 cup tomatoes | minced
½ cup basil
½ cup onions | minced
¼ cup olive oil
1 tsp sea salt
INSTRUCTIONS:
Roasted Zucchini:
Score the zucchini, then season with salt and drizzle with avocado oil. Roast in a pan on medium heat for 1 minute. Then bake for 5 minutes in the oven at 400 F.
Salsa:
In a bowl, add all of the salsa ingredients and mix.
Top the salsa onto the roasted zucchini. Serve and enjoy!
