Vegan Scallops

INGREDIENTS:

Scallops:
3 king oyster mushroom | chopped
¼ cup avocado oil

Sauce:
2 tbsp coconut aminos
1 tbsp shallots | minced
1 tsp agave syrup
1 tsp onion powder
½ tsp sea salt
1 cup onions | sliced

INSTRUCTIONS:

Sauce:
In a bowl, add all of the ingredients for the sauce, except for the onions and mix well. Then set aside.

Scallops:
In a pan brushed with avocado oil, cook the mushrooms on medium heat for 2 minutes. Then add the sauce mixture and cook for another minute. Set aside. On the same pan saute the onions for 1 minute. Top the onions on to the mushrooms. Serve and enjoy!
